Sultry Citrus Salad



Since May 5th of this year, I've been eating a salad almost everyday. It was at that time that I made my soft "come-back" into the online world as a wellness warrior, albeit a timid one! I was a little rusty, since I had been working full-time in management for my local farmers market. Due to LONG hours running our brick & mortar Farm Stand, I had allowed unhealthy habits and unwanted pounds to creep back into my life.

Back to the salad... so many salads I've made and eaten in the last 30 days, but this one is a longtime favorite. I hope you'll try it and let me know what you think!


Sultry Citrus Salad

For the Salad:

fresh baby arugula or rocket

1 blood orange, peeled and sliced

1 Cara Cara orange, supremed

3 strawberries, thinly sliced

pomegranate seed

pistachio nuts

freshly cracked pepper


For the Dressing:

2 oranges, juice only

3 or 4 dates, pitted

2 tablespoons green pesto oil

2 cloves garlic

1 tablespoon fresh lemon juice

pinch himalayan salt


Combine the above ingredients in a blender to make a lovely dressing for this gorgeous salad. Tossed the arugula with the dressing and added in all the other colorful additions to create a beautiful presentation. A simple drizzle of balsamic vinegar to finish add the perfect touch and is so delicious with the strawberries and other fruits!
