
Strawberry Quinoa Tabbouleh
As I’ve been researching ways to build our immunity, it’s become obvious that what we already know is true - FOOD IS MEDICINE! This recipe is a delicious way to give yourself the powerful gift of colorful, fresh, vibrant nutrition!
1 -2 cups cooked quinoa
1 ½ cups fresh strawberries, chopped
1 ½ cups finely diced cucumber
½ can garbanzo beans, drained and rinsed (optional)
¼ of a red onion, very finely diced
⅓ cup sliced almonds
¾ cup fresh mint, chopped
¾ cup flat-leaf parsley, chopped
1 tablespoon vinegar of choice
2–3 tablespoons fresh lemon juice
1/2 teaspoon Himalayan salt, or to taste
fresh cracked pepper, to taste
Optional - top with fresh avocado
Combine all ingredients in a large bowl. Leftover portions will keep well in air-tight containers in your refrigerator for 3 days.
