Sicilean Citrus Blueberry Crumble
Start your day with a Mediterranean fruit combo of assorted citrus fruits and fresh blueberries with a little drizzle of good quality EVOO, a pinch of flakey salt and raw pistachios! Turn your leftovers into your evening’s dessert by adding healthy ingredients to make a crisp topping!
Citrus and blueberries help to protect our cells with their high antioxidant content. They also assist in balancing hormones and keeping the immune system boosted!
For the Crumble Topping:
1 cup rolled oats
½ cup shelled pistachios
½ cup sliced almonds
½ cup almond meal
½ cup unsweetened flaked coconut
2 tbsp hemp seeds
pinch of sea salt
1 tsp of Ceylon cinnamon
¼ cup olive oil + more for the bottom of the pan
⅓ cup real maple syrup
2 cups surpremed and sliced oranges
2 cups fresh blueberries
2 tbsp goji berries
Preheat oven to 350 degrees F.
Mix topping ingredients together in a large bowl until well combined.
Combine the fruit and add to the bottom of a lightly greased casserole dish. Add the topping. Bake for approximately 35 mins at 350 until bubbly and then let it rest/set!
Pro tip: Cover if it's getting too brown too fast. You can top it with a little vanilla vegan ice cream, yogurt, or just enjoy it straight up cold out the fridge for breakfast or dessert. So good!
