Happy Heart Oatmeal Almond Power Balls

These yummy protein-rich power balls are low in sugar and high in good-for-you ingredients! Perfect if you get a sweets craving - satisfy yourself without blowing it! 1 ball a day keeps the cravings away!

1 ½ cup raw almonds

½ cup gluten free oats (or oat flour)

¼ cup almond butter

3 tbsp coconut oil (melted)

3 tbsp maple syrup (or other liquid sweetener of choice)

1 tsp pure vanilla extract

1 tsp adaptogen/mushroom or other superfood powder of choice

½ tsp ceylon cinnamon

½ tsp Himalayan salt

¼ cup chopped chocolate chips (or sub cacao nibs or fruit sweetened cranberries)

In a food processor or high speed blender, pulse chop the almond to a chunky flour consistency. If using whole oats, add to the blender a pulse a couple of times to break them up.

Transfer the almonds and oats to a large mixing bowl.

Add the almond butter, maple syrup, coconut oil, vanilla, superfood powder, cinnamon and salt. Stir well to combine.

Add in the chocolate chips, cacao nibs or cranberries until all ingredients are combined.

Form balls with the mixture. You could use a small ice cream scooper if you want to keep the size uniform. The mixture will be a bit crumbly, but as the coconut cools, they will stay together well.

Place the finished balls on a plate or tray and put into the freezer for 30 + minutes for them to set up.

Store at room temperature for a week, 2 weeks in the fridge and a month + in your freezer.
