Fiberlicious & Glowing - a Fresh Spring Salad
This whole grain, fiber-filled, protein-rich salad is made with easy to find, affordable Mediterranean ingredients – cucumbers, tomatoes, lemon juice, feta, and fresh spring herbs. Feel free to add cooked artichoke hearts, kalamata olives, capers and/or sliced avocado. So delicious as a side dish or even as a main course. Drizzle with a balsamic reduction to add to the taste sensation!
1 cup uncooked pearled farro, or other whole grain of your choice
2/3 cup finely chopped English or Persian cucumber
½ cup cooked garbanzo beans
1/4 cup minced sun-dried tomatoes
1/4 cup fresh grated feta (vegan options available, or omit)
1/4 cup finely chopped bell pepper
2 tbsp minced red onion (or green onion)
1 tbsp fresh lemon juice
1 tbsp olive oil
finely chopped mint, parsley and or basil, to taste
Himalayan salt and fresh cracked pepper, to taste
Cook farro according to package directions. Drain and let cool.
Combine with remaining ingredients and toss well. Serve chilled or room temperature.
