Happy Friday! My goodness, this month is nearly over!
Since last week's episode, we've officially moved into Autumn, so I wanted to create a breakfast option that includes warmth, both in spice and temperature. I also wanted to create something that has massive nutrition and staying power to fuel us well into the day - without being loaded with sugars.
This seasonal breakfast will warm you on a cold morning and offer another option for enjoying more immune supporting and healing ingredients that help to balance the body and blood sugar.
1 1/4 cup brewed Vanilla Chia Tea (cinnamon tea or other tea of your choice)
1/2 cup gluten free oats
2 tbsps chia seeds
1 tbsp ground flax seeds
1 tbsp hemp seeds
1 tbsp goji berries
2 tsp sesame seeds
2 tsp pumpkin seeds
1 tsp shredded coconut
1 tsp cinnamon
1 tsp + mushroom powder, variety of your choice
2 heaping tbsp cooked sweet potato (sub pumpkin or other seasonal squash)
1 tbsp almond butter
pinch of cardamom
cacao nibs, for garnish, if desired
Combine all ingredients in a sauce pan and pour the steeped, hot tea over the mixture. Stir well to combine, cover and allow the oats mixture to sit for about 10 minute to allow time for the oats, chia & flax seeds to absorb the tea.
You can put the sauce pan on a burner on the stove, on low to keep it warm as the mixture expands.
This will also store well in an airtight container in your refrigerator for several days.
