This power pudding offers a delicious way to enjoy more immune supporting and healing mushrooms, adaptogens and other body, gut, blood sugar and hormone balancing ingredients.
1 1/4 cup plant milk
4 Medjool dates, pitted
1/4 cup chia seeds
1/4 tsp vanilla
2 tbsp cacao powder
2 tbsp pumpkin puree (and more for the topping)
1 tsp Ceylon cinnamon
1 + tsp mushrooms powders (I used chaga, reishi &/ lion's mane)
1 tsp maca powder (or ashwagandha)
Use an alternative sweetener, if desired
Combine all ingredients by hand or in a blender. Add the blended pudding to a jar and top with more pumpkin puree, hemp seeds and cacao nibs.
This will store well in an airtight container in your refrigerator for several days.
