
A Taste of the Season - Chipotle Hummus

The perfect autumn appetizer or game day dip. Wonderfully balanced with the spicy flavor of chipotle, a hint of sweetness from maple syrup and the subtle addition of pureed pumpkin and turmeric. So healthy and delicious, this dip is also great smeared on a tortilla for a veggie wrap or served with cut veggies and crackers. Top with candied pumpkin seeds to take this to the next level!
1 - 14 oz can chickpeas, drained & rinsed
1/4 cup tahini
1/4 cup pumpkin puree
1/2 chipotle pepper
1 tbsp adobo sauce from the can of chipotles
1/2 tsp garlic granules or powder
2 tsp maple syrup
1 tbsp fresh lemon juice
1/4 tsp turmeric
1/4 tsp sweet or smoked paprika
Himalayan salt and freshly ground pepper, to taste
water as needed to blend (I used about 1/4 cup)
Optional toppings:
candied or roasted pumpkin seeds, a drizzle of olive oil, roasted chickpeas
Place all ingredients into a high speed blender and puree until totally smooth, stopping to scrape down the sides often. Add in cold water, a little at a time until you reach your desired consistency.
